Coconut Butternut

Phase 2 of the Beachbody Ultimate Reset is over tomorrow, I can’t believe it!  After that, only one more week left.  I think I’ll be sad when it’s over.  I’ve gotten used to taking the supplements and knowing exactly what to eat at each meal.  But I will say that I am most definitely looking forward to starting a hybrid of TurboFire and ChaLEAN Extreme as my workout program.  Oh and definitely looking forward to drinking Shakeology again!  The weight loss results I’ve had so far have been amazing and I want to keep it up, especially since summer is coming and I’m attending the Beachbody Coach Summit 2012 in Las Vegas in June. I can’t wait!

I added some peaches into my fruit salad for today and it was delicious!

Lunch was my usual microgreen salad with roasted beets.  Guess I roasted them a little too much, whoops!  Beets have never been my favorite, but it still tasted good.

I did have a snack in between because I was a little hungrier today, but it was my same green apple with blueberries.

Dinner was amazing!

Roasted butternut squash roasted with onions, garlic, and coconut milk, with a side of steamed broccoli and steamed zucchini.  The original recipe was for kabocha squash, but neither I nor anyone on my team could find it anywhere.  The dressing was also supposed to be a garlic-tahini dressing, but since I can’t do sesame, one of the amazing coaches on my team suggested I use coconut milk, and it worked out great.

I’m also excited because I’m really diving into the materials at Institute for Integrative Nutrition.  With this being pretty much my only full evening off this week, I’m taking advantage of the time I’ve got!

Collard Beets

Day 12 is done and I’m feeling a lot better than I have the past few days.  I even did a little Tai Cheng this afternoon!  After doing yoga work study, I was able to meet up with Diana, whom I haven’t seen in weeks!  It turned out to be a gorgeous day too, so we sat and had lunch in the sunshine at Whole Foods.  I also had an amazing conversation with my health coach through Institute for Integrative Nutrition.  I really can’t wait to see what my journey this year brings!

Today’s lunch on the Reset was hearty vegetable miso soup with a microgreen salad, so I compromised at Whole Foods.

I grabbed some lettuce and threw a bunch of different things on top: quinoa salad, artichokes, beans, zucchini salad, and cucumber tomato salad.

I thought I was super hungry so I grabbed some vegan sushi too, even though it wasn’t Reset approved with the white rice.  I ended up being satisfied with what I ate and only ate a few bites of the sushi and decided to bring the rest home to my mom (it was either that or throw it in the trash, and I hate throwing food away).

I did get semi-hungry in the afternoon though, so I grabbed my blueberries and green apple. No pic of the green apple though, I was already eating it when I realized I hadn’t taken a pic.  🙂

For dinner I had collard greens for the first time with roasted beets and it tasted amazing!  I used a little too much coconut oil to took it, but it was prepared with that, some onions, garlic, coconut milk, and a little Himalayan salt.  So good!!

Now to get ready for a busy week!

Day 11 of the Beachbody Ultimate Reset is over!  I can’t believe that I’m already more than halfway done.  My eyes are looking brighter, my skin is looking clearer, and my stomach is flattened out so much in just one week, I can’t believe it!  Of course, I’m super excited  and can’t wait to start working out once the Reset is over so that I can continue with my results.

I also haven’t been bloated at all, except for once, when I used Bragg’s Liquid Aminos in one of the recipes.  Bragg’s is loaded with too much sodium for me, but I’ve discovered that I can use Himalayan sea salt and not get bloated at all!  I love it!!!

I did sleep a lot last night to today and didn’t feel my greatest this morning, but now I’m started to feel a little bit better.  My body’s definitely going through a lot in order to cleanse itself.  Thankfully my appetite returned to normal and I had trouble finishing both my lunch and dinner, which has been normal on the Reset.

I’m loving the fruit salad for breakfast everyday!  Today I bought some peaches, so I can’t wait until they’re ripe so I can add them to my daily breakfast.

My mom and I went to a family friend’s birthday party today, but I made sure to pack my lunch and my distilled water with me.  This is my leftover quinoa lentil pilaf from last night with some cucumber tomato salad.  I was pretty upset when I went to go chop up the cucumber and discovered that it had no seeds inside.  Why was I upset?  Because that means that it was most likely genetically modified, but I didn’t have time to go buy a new cucumber and I didn’t want to starve, so I ended up eating it.  I’m throwing the rest of the cucumber away!

Tonight’s soup was perfect for the cold temperatures we’ve been having lately.  Hearty vegetable miso soup with steamed leafy greens.  It was supposed to be swiss chard, which I was really excited about trying for the first time, but Whole Foods didn’t have any.

I’ve been really wanting to do a little light yoga with my TurboFire Stretch 40 DVD or a little Tai Cheng, but the course of my days are usually work all day, have something going on in the evenings, come home cook dinner, quickly check messages on the computer, blog, then head to bed.  I can’t wait to break out of this cycle because it’s not doing me any good!  This upcoming week is going to be crazier than normal, but it’s no wonder that my body is so exhausted all the time.  Let’s see what Day 12 brings tomorrow!

Berries

Today was Day 10 of the Beachbody Ultimate Reset.  Another rough day, but I think it’s just my hormones re-adjusting themselves.  I was insanely hungry today something that has NOT happened to me at all on the Reset before today.  I’m so fortunate to have the amazing support of my other Beachbody teammates who have gone through the Reset themselves or who are also doing it.  I love my team!  I didn’t lose any more pounds today, but I can feel the inches flying off!

I’ve also had strange cravings today, for things like pizza (but only my amazing gf vegan Z Pizza, not the real stuff!) and chocolate Shakeology.  Just in case you’re wondering if The Healthiest Meal of the Day is allowed on the Reset, it is, but only the Tropical Vegan kind.  I could have it for breakfast everyday if I wanted to, but I really wanted to follow all the recipes in the guide as closely as possible, so I’m saving my Shakeology for when I’m done!

That’s my bag that arrived a few days ago, and I still have some leftover from last month. That’s never happened to me!  Seriously, one of the best meals ever.  Contact me if you want to know more about ordering.  It will change your life 🙂

My yummy stand-by snack of fresh blueberries & a green apple.  Just in case you’re wondering, each phase of the Reset does have specific snacks that you may have, if you choose to have them.

Quinoa lentil pilaf with steamed broccoli for dinner.  Seriously, THE best quinoa I’ve ever had, and I’ve had plenty of quinoa variations throughout my life.  This is definitely going to become a stand-by for me.  Plus it was super easy & quick to make!

Another thing I love about the Reset is that the recipes are tailored for one person.  I have so many cookbooks that include recipes for 8 people, and I don’t know about you, but I definitely don’t want to be eating the same exact thing for 8 days in a row.  I need a little variety in my life!

It’s going to be a busy weekend, but got lots of fun things going on!  I’m titling this post Berries in honor of The Hunger Games (if you’ve read the books, you’ll understand) & the fact that I’m meeting my good friend Diana for lunch on Sunday, as well as the fact that I had lots of berries today & overall on the Reset.  Diana & I are both obsessed with HG & it’s been forever since we’ve hung out, I can’t wait!  🙂

Just the Leaves

Day 9 of the Beachbody Ultimate Reset is over!  All I can say is, I’m definitely majorly detoxing. I feel it in my body & I’m experiencing symptoms that nobody else has experienced. My body is most definitely super sensitive to a lot of things (I guess it kind of fits in with me being a medical mystery though!!!)  Can’t believe I’m almost halfway done with the Reset.  Oh & I almost forgot – I’m down another pound!

And an exciting discovery I made at Trader Joe’s today was romaine lettuce without the stems (is that what they’re called?!  I have no idea, but for the purposes of this post, that shall be what they’re called!)  🙂  I always throw away the stems, so I was super excited for my find!

Now I have to answer a few emails & I’m off to bed!

 

Detox

Day 8 of the Reset is complete, with 1 new supplement added into my new daily regime, Detox, 3 times a day.

And of course, I had another amazing day of meals!

Microgreen

Short blog post tonight, because I’m tired and I want to go to bed!  🙂

Best news of the day: I do NOT have Lyme Disease, yay!!!!  The neurologist gave me a prescription for a preventative medicine which he said works with most people to break the cycle of chronic daily headaches.  I’m *praying* it brings me some relief, but I told him I’m not taking any medicine until I’m done with the Beachbody Ultimate Reset.  When I showed him what the Reset was, he absolutely loved it & told me that hopefully that alone will help to alleviate some of the pain that I feel.

Now onto the food!

Definitely way less sore today, though still a little tired.  Also was down another half pound.

Tomorrow brings Phase 2: Day 8!  I can’t wait!

Determined

I can’t believe that I’m almost done with Phase 1: Reclaim, of The Beachbody Ultimate Reset.  I start Phase 2: Release, on Wednesday.  Today I felt much better than yesterday in terms of soreness.  Still feeling a little tired.  Today’s meals, once again, were nothing short of amazing!

I’m finding that when it’s time to eat, I’m not actually that hungry.  And the few times when I did feel a little hungry in between meals, all I did was guzzle some of my distilled water with Mineralize, and I was good to go.  I never believed that drinking water made you full because it never worked for me before, but today I used it & I thought my stomach was going to explode!

I’m drinking an average of a gallon a day!

The subject of my post doesn’t come from doing the Reset though.  It’s related to my health, once again.  I went to the chiropractor like I always do, except today I was assessed for the 3rd time to see how I’m doing with my chiropractic treatments.  I saw visual images of what your body’s supposed to look like & what mine looks like.  The perfect spinal column has everything balanced with rays of green emanating out of it.  Mine was red all up & down my spine with only about 3 green areas, and looked nearly identical to my first scan.

My chiropractor basically broke it down to me & said that he’s not seeing any improvements. He wants to keep working with me, but every other week instead of once a week (I used to go twice a week).  He suspects that I have a mild case of fibromyalgia, coupled with IBS, chronic daily headaches, and my PCOS.  All syndromes that have vague symptoms that can’t exactly be pinpointed & not exactly what you want to hear when you’ve done a lot in your power to heal yourself.

Yet I am determined to fully heal.  I refuse to live the rest of my life in the constant pain that I’m in.  It’s no way to live life & I’m too young to deal with all of this.  I want to be happy, healthy, & whole, & I’m going to do what it takes to get there.  I know that the Reset is helping me a lot with that & I firmly believe that studying at IIN is going to help me a lot further on my journey as well.

Something that cheered me up upon getting home was seeing my Emerald certificate from Beachbody, yay!

Now it’s off to bed because I have an appointment with the neurologist tomorrow.  Let’s see how that goes!

Reset Exhaustion

I can’t believe that I’m already on Day 5 of The Ultimate Reset!  I’m definitely loving the food, but not how I’ve been feeling.  I’m down another half pound, but today was the worst day yet. I woke up feeling exhausted, which is how I’ve felt most of the day, as well as sore.  I can also feel that my body is majorly detoxing.  Thankfully, these are all super normal symptoms of doing the Reset, especially since Days 3-5 are the hardest!  Only positivity from me because that means it’s working!!!  🙂

Breakfast was fresh fruit with oatmeal.  In the nutrition guide, it has you combine them, but I’ve read that fresh fruit shouldn’t be combined with other foods because of the way it digests in your stomach and since my body’s so sensitive, I ate the fruit first, then waited 20 minutes to eat my oatmeal.  I forgot to take a picture of the oatmeal, but you all know what oatmeal looks like.

Lunch was raw veggies with quinoa salad.  We were supposed to eat the raw veggies with hummus, but since I don’t really love hummus, I decided to leave it out.  The quinoa salad had mint & parsley, which at first I thought I wouldn’t like, but it was super delicious!

Dinner was miso soup with brown rice and sauteed veggies.

What I’m loving about the Reset is creating all of these amazing meals.  I actually really don’t like to cook, especially when a recipe takes forever & doesn’t even end up tasting good, but I’m actually thoroughly enjoying the meal prep & making all this delicious food, especially because it tastes good!

I’m all prepped for tomorrow & ready to go to sleep!  Hoping tomorrow I’ll feel a lot more energized.

Optimal Nutrition

I’ve been wanting to blog since Wednesday, when I started the Beachbody Ultimate Reset, but of course with my crazy schedule, I haven’t gotten around to it.  I’m looking to cut out several things from my schedule because I’m finding that I don’t have the time to truly focus on my passions, namely Beachbody and Institute for Integrative Nutrition.  I’ve spent most of today catching up on my coursework for IIN, which I absolutely love, but I’m really wishing I couldn’ve gotten most of it done during the week.

I’m loving being on the Beachbody Ultimate Reset though!  The meals are so amazing and are making me appreciate food so much more.  Each day I take my supplements before eating my meals & I can tell they’re working because these first few days I’ve been feeling a little tired & sore, like you do after a great workout.  Pilot groups for the Reset reported feeling the same way, because your body is getting an internal workout and cleansing itself of toxins.

I’m currently on Phase 1 of the Reset, so in the next Phase, which will start on Wednesday, a new supplement will be introduced to help my body with the detoxification process.

Another huge benefit?!  I’ve lost 4 pounds!  I’m loving how simple & easy the recipes are to prepare and that I’m learning to make new things.  Can’t wait to see what the next 17 days bring!
