Highlights

My day can best be summarized by many wonderful highlights.  It’s always the little things, isn’t it?  I started my day at 6 am with my favorite TurboFire workout and that got me pumped and ready to go!

But first, an update on my raw journey.  I’m not focusing on “oh I’m eating raw so I can’t eat that” or “I’m not eating raw because I feel like something cooked.”  I’m just taking things as they come and seeing what I feel like making.  Shakeology is my breakfast every single day without fail.  For lunch I decided to make myself a raw kale salad with avocado, nutritional yeast, sprouts, cherry tomatoes, and pumpkin seeds.  Snack was a cherry pie LÄRABAR and since I had to rush off to the chiropractor shortly after getting home, dinner was another Shakeology.

So what exactly were the highlights of my day?  Coming home to find this waiting for me:

I’ve heard so many people now talking about The Hunger Games that I had to order it.  Can’t wait to start reading!  I of course was completely obsessed with Harry Potter and Twilight, so I’m sure the same will happen to me with this series.

Chloe’s Kitchen is by chef Chloe Coscarelli.  She was the first vegan cupcake baker to win Cupcake Wars and now I’m so excited to have her book!  I flipped through it quickly and the recipes look amazing.  Even though it’s not gluten-free, I can easily modify the recipes to make them so.

That wasn’t the only thing waiting for me though.  There was also all of this:

I now have Tropical Shakeology samples to give to people, yay!  I’m also loving my new t-shirt and can’t wait to use my water bottle.  The lanyard is of course going around my neck since I’m a teacher and we have to wear our badge at all times.

That’s not all though!  When I got home from the chiropractor, yet another box was waiting for me!

So now I have chocolate samples of Shakeology to give away too!  If anybody’s seriously interested in trying out this amazing product, message me and I’d be more than happy to send you some to try!  Now you have to believe that I wouldn’t invest this much money in Beachbody products if I didn’t believe in the company.  🙂

I’m now sipping on some green tea kombucha that I found at the health store the other day. It tastes like green tea, but is slightly bubbly like kombucha, I love it!  Have a great night!!!

p.s. I’m sorry for the poor lack of quality on the pictures.  I’ve been relying on my iPhone a little too much lately instead of my camera!

Smile

Happy Monday!  I switched up my breakfast today from a Shakeology smoothie to chai soaked oatmeal with blueberries and goji berries.

Lunch was a delicious tofu scramble that nearly rivaled what I had at Le Pain Quotidien a few weeks ago.  I found the recipe thanks to Fat Free Vegan Kitchen.  The amazing ingredient that definitely makes this uber delicious is nutritional yeast.

The highlight of my day was going to the dentist and getting my Invisalign braces for my teeth.  My smile used to always bother me, until I actually started showing it and people told me how much they liked my smile.

Even though I’m fortunate enough to have been born with straight teeth, they’re extremely tight in the back of my mouth and I have wider gaps where you see my smile.  So I signed up back for Invisalign back in December and can’t wait to see the results in about 6 months!

The downside:

The braces are super tight on my teeth and it actually hurts to take them off – I have to wear them 24/7 and am only allowed to take them off when I eat or if I drink anything other than water

The upside:

This will be an incentive for me to not mindlessly snack since I have to be super conscious about what I’m eating.  I can’t just pop a date or two in my mouth anymore because it requires taking the braces off, which is just not worth the effort!  🙂

For dinner I attempted to make a lentil brown rice stew.  Followed a recipe, but I still feel like it lacked something, even though I added my own twist.  That’s what cooking’s about though, experimenting!

I FINALLY got back into TurboFire and I’m so glad that I did.  I felt SO GOOD as I was working out and it helped me to realize just how truly passionate I am about TurboFire and Beachbody products.  I was smiling the whole time, having fun, and actually realized how much I missed working out.  Trust me, if I can feel this way, anyone can!  I want everyone to know about how amazing it is and can’t wait to grow my Beachbody team!  If you’re interested in finding out more, email me at veganpcosgoddess AT gmail.com  You won’t regret it, I promise!!!  😀

Journey to Manifestation

As the weekend comes to a close, I started thinking about all of the things that I want to accomplish for myself this year.  As I mentioned on Friday, last week didn’t afford me the opportunity to truly work on my dreams & desires.  I didn’t get to do any yoga and I didn’t do any TurboFire either!

Instead of blaming outside circumstances for what happened though, I began to think about everything that I want to achieve, and the steps that I need to accomplish them.  By radiating my inner calm and remembering the value in everything that I want to do, I can streamline the process for everything that I’ve got going on.

And trust me, it’s a lot.  I hadn’t even really realized how much I’ve involved myself in and since I tend to be a procrastinator, I feel the need to write it all out to remind myself of my goals and how I’m going to get to each and every thing, even if I only take small steps each day.  Each step will create the path of my journey.

At the forefront of it all is my vision board, but those things won’t actually happen if I don’t hold the intent and belief that they WILL happen, no matter the outward circumstances.  I’ve seen miracles manifest in my life by being open and willing to receive them.  As the Law of Attraction states, “what you think about, you bring about.”  Yet even though I’ve known this for years, I seem to forget to put it into practice.

Today, at exactly the right moment, I saw this image posted by a friend on Facebook.

I started listening to Gabrielle Bernstein’s podcasts in the car and she reminded me of the power of manifestation and focusing on your desires.  Focus on abundance instead of lack, but most importantly, FEEL it all as if it were real.  Be thankful for what you do have so that more can come to you.  It’s the Law of the Universe.

Expect a miracle, and it will happen, usually in a form that you may not even have expected, but much better than you ever could’ve imagined.

It’s almost Friday!!!

I’ve been rocking TurboFire

Eating yummy vegan food

(Seriously, best bar ever!)

and just scored an awesome deal on Living Social at a cafe in Clarendon that I’ve never even heard about called South Block Smoothie & Wrap Co.  I’m so ridiculously excited that they have things on their menu like Acai Bowls and a Super Green Smoothie.  Plus there are tons of vegan friendly options on the overall menu.

Got lots of exciting things coming up that I can’t wait to post about!

Mermaid

It was a great weekend.  I was able to sleep in, made a major change to my hair color, finally saw The Girl with the Dragon Tattoo, and took the most amazing yoga class tonight.

Mermaid – the pose I was able to do in yoga tonight, surprising myself!

I feel like I’ve gotten a little off track with my eating, so this week, it’s back to tightening it up again.  Not that I’ve been eating junk food or anything.  For me, if I eat one too many pieces of fruit or eat too much salt, my body rebels.

Since I’ve been too tired to do workouts after work, I’ve decided that from now on, I’m getting up at 6 am to do TurboFire.

Yoga helped me get super pumped for my week!  I’m ready!  🙂

Soup and Salad Day

My day started in the best way possible.  I was up early, ready to work out to TurboFire.  I haven’t done TurboFire in a few days and was ready to get back into the swing of it.  When I saw that the DVD I had to do today lasted nearly an hour though, I was wishing it would go by fast, if only because I wasn’t sure I was THAT pumped to do a workout.

I’m so glad that it went better than I could’ve anticipated!  Chalene Johnson keeps you pumped as you exercise and halfway through the sequence, I was more energized than ever. The hour went by extremely fast and I was feeling so good at the end of it, envisioning what my body will look like if I keep this up along with regular yoga workouts.  The choreography isn’t too complicated and Chalene uses positive language to keep you motivated towards your goals.  I also usually hate working out, so the fact that Chalene can get me so pumped about this workout is saying something.  I’d usually much rather be doing yoga than any other workout, especially since I don’t see yoga as a workout, but I’m so excited to do the entire TurboFire program and reap its benefits.

Breakfast:

Being a BeachBody Coach, I want to try the products out for myself so that I’m able to tell people how amazing they are.  Shakeology is a great drink to have either for breakfast, lunch, or as a snack.  It’s super delicious and filled with amazing superfoods!

Lunch:

Blueberry Kale Spinach Salad with a Black Bean Burger

Snack (this tasted exactly like carrot cake – I was pleasantly surprised):

I went out grocery shopping for some things I needed and got some great stuff, including Kombucha…

which inevitably always reminds me of this video and my friend Diana:

You’ll see why about 3 seconds into the video 😉

I also couldn’t resist buying this great little Whole Foods bag.  When the guy told me it was only $0.99, I had to get it!

Dinner was more soup and salad.  I didn’t even intentionally mean to eat soup and salad for both lunch and dinner, but it’s what I ended up making, and it came out great.

Kale salad.  I “wilted” the kale with half an avocado.  Thank you Whole Foods for the amazing recipe!

Carrot Red Pepper Soup

And finally, I had a little dessert.  Usually I try not to eat dessert, but I was flipping through my copy of The Beauty Detox Solution earlier today and noticed an amazing recipe for Chia Seed Delight.  Kimberly Snyder was a very positive influence for me at the beginning of my vegan journey and I love that she’s so knowledgeable about so many plant-based superfoods.

I accidentally put a little bit too many chia seeds in there and ate maybe 1/6th of the bowl, so I saved the rest to eat for another day.

My goal is to go to yoga at least twice this week and work out to TurboFire the rest of the time.  I’m off to relax before going to bed!

21-Day Vegan Kickstart + TurboFire

Today PCRM, the Physician’s Committee for Responsible Medicine, began its 21-Day Vegan Kickstart. Each day you get a message from a celebrity that guides you through each day on the Kickstart and there’s a 21-Day meal plan to help you get started on the path towards healthier eating.  The foods look delicious and there are amazing recipes included.  Even if you’re not fully committed to eating vegan 100% of the time, it will definitely give you some great ideas for things that you can make for yourself.  The best part is that you don’t have to think about what to cook, it’s all done for you!  I have to do some meal planning for myself after I’m done with this post and I’m definitely going to use some of the things that are posted in the Kickstart as a guide.

One of my goals for this year is to work out on a regular basis and I’ve been doing that with TurboFire, an awesome workout by Chalene Johnson.  I love TurboFire because it’s similar to one of my other all-time favorite workouts, Zumba.  Chalene is filled with high energy and keeps you going and makes sure that you’re having fun as you work out.  I even found myself singing along with one of the songs this morning!  I recently became a BeachBody Coach and I’m so excited to use one of their products to help myself get fit, as well as help others who require that same motivation and accountability.  What I love about TurboFire is that you get the entire set of DVDs along with a workout schedule, so you don’t have to think about which workout to do when and you can follow the schedule to your liking.

I’ll be back with another post later, but for now, I’ll leave you with the video that motivated me to get started with TurboFire and keeps me coming back for more each day!
