Collard Beets

Day 12 is done and I’m feeling a lot better than I have the past few days.  I even did a little Tai Cheng this afternoon!  After doing yoga work study, I was able to meet up with Diana, whom I haven’t seen in weeks!  It turned out to be a gorgeous day too, so we sat and had lunch in the sunshine at Whole Foods.  I also had an amazing conversation with my health coach through Institute for Integrative Nutrition.  I really can’t wait to see what my journey this year brings!

Today’s lunch on the Reset was hearty vegetable miso soup with a microgreen salad, so I compromised at Whole Foods.

I grabbed some lettuce and threw a bunch of different things on top: quinoa salad, artichokes, beans, zucchini salad, and cucumber tomato salad.

I thought I was super hungry so I grabbed some vegan sushi too, even though it wasn’t Reset approved with the white rice.  I ended up being satisfied with what I ate and only ate a few bites of the sushi and decided to bring the rest home to my mom (it was either that or throw it in the trash, and I hate throwing food away).

I did get semi-hungry in the afternoon though, so I grabbed my blueberries and green apple. No pic of the green apple though, I was already eating it when I realized I hadn’t taken a pic.  🙂

For dinner I had collard greens for the first time with roasted beets and it tasted amazing!  I used a little too much coconut oil to took it, but it was prepared with that, some onions, garlic, coconut milk, and a little Himalayan salt.  So good!!

Now to get ready for a busy week!

Day 11 of the Beachbody Ultimate Reset is over!  I can’t believe that I’m already more than halfway done.  My eyes are looking brighter, my skin is looking clearer, and my stomach is flattened out so much in just one week, I can’t believe it!  Of course, I’m super excited  and can’t wait to start working out once the Reset is over so that I can continue with my results.

I also haven’t been bloated at all, except for once, when I used Bragg’s Liquid Aminos in one of the recipes.  Bragg’s is loaded with too much sodium for me, but I’ve discovered that I can use Himalayan sea salt and not get bloated at all!  I love it!!!

I did sleep a lot last night to today and didn’t feel my greatest this morning, but now I’m started to feel a little bit better.  My body’s definitely going through a lot in order to cleanse itself.  Thankfully my appetite returned to normal and I had trouble finishing both my lunch and dinner, which has been normal on the Reset.

I’m loving the fruit salad for breakfast everyday!  Today I bought some peaches, so I can’t wait until they’re ripe so I can add them to my daily breakfast.

My mom and I went to a family friend’s birthday party today, but I made sure to pack my lunch and my distilled water with me.  This is my leftover quinoa lentil pilaf from last night with some cucumber tomato salad.  I was pretty upset when I went to go chop up the cucumber and discovered that it had no seeds inside.  Why was I upset?  Because that means that it was most likely genetically modified, but I didn’t have time to go buy a new cucumber and I didn’t want to starve, so I ended up eating it.  I’m throwing the rest of the cucumber away!

Tonight’s soup was perfect for the cold temperatures we’ve been having lately.  Hearty vegetable miso soup with steamed leafy greens.  It was supposed to be swiss chard, which I was really excited about trying for the first time, but Whole Foods didn’t have any.

I’ve been really wanting to do a little light yoga with my TurboFire Stretch 40 DVD or a little Tai Cheng, but the course of my days are usually work all day, have something going on in the evenings, come home cook dinner, quickly check messages on the computer, blog, then head to bed.  I can’t wait to break out of this cycle because it’s not doing me any good!  This upcoming week is going to be crazier than normal, but it’s no wonder that my body is so exhausted all the time.  Let’s see what Day 12 brings tomorrow!

Going Raw – Days 3 & 4

I had all the best intentions to blog last night, but Wednesdays are my  longest days & by the time I got home & got myself settled for the next day, it was nearly 11:30.

My next few days of eating raw have gone relatively better, except that I’ve incorporated Shakeology into meals each day since.  I also have realized that I cannot go 100% raw, but it’s ok if I don’t want to.  I just need to listen to my body and give it what it really needs.  Here are some things I’ve been eating the past few days…

Today’s kale salad thanks to PUREmamas blog.  I didn’t have some of the ingredients, so I modified as necessary, and it was pretty good!

Raw cacao shake with avocado, banana, some raw honey, and a little water.

A little surprise heart as a result of some water I spilled on my desk (I’m also taking this is a sign that love & romance is on the way for me) 😉

I also started doing Tai Cheng, Beachbody’s latest, newest workout program, which I’m super excited about.  As I was doing it, I started thinking about how this might really help me with my health issues.  I’m planning on doing it as I go through The Beachbody Ultimate Reset and then continuing it afterwards when I go back to my Chalene Johnson worksouts.

I won’t be blogging again until Saturday night, because I’ll be heading up to Philadelphia tomorrow night to go see Carl Daikeler, Beachbody’s CEO, for one of Beachbody’s Super Saturday events on April 14.  I can’t wait!  Not sure I’ll stay raw, but I’ll definitely be eating as cleanly as possible!
